Coffee Spiced Zabuton Steak

INGREDIENTS
COFFEE SPICE RUB
- 1/2 cup light roast ground coffee
- 1/2 cup kosher salt
- 1/3 cup smoked paprika
- 2/3 cup brown sugar, packed
- 2 tablespoons sugar
- 2 tablespoons granulated garlic
- 1 tablespoon cumin powder
- 1 teaspoon cayenne pepper
FOR THE ZABUTON
- 4 each 5-6oz cut zabuton steaks
- reserved coffee spice
- grapeseed oil
METHOD
- FOR THE RUB
Mix all ingredients in a medium bowl, using your hands to break up any clumps. Store in airtight container, in a cool, dry place. - FOR THE ZABUTON STEAK
Rub the steaks with the coffee spice rub. Preheat grill to 400-450, direct heat. Grill the steaks quickly over open flame to medium rare (135F internal temp), then remove from the heat and allow 7-8 minutes to rest on paper towel lined sheet pan.
